Basil & Calendula officinalis (Pot Marigold)
Basil left over in the vegetable garden can be chopped up and stored in small portions in the freezer. So whenever there is an urge for pesto during winter just defrost a portion and it is ready for use.
With the Calendula flowers which I have been collecting & drying daily since June I make cold infused Calendula oil.
Pack a glass jar tightly with the dried & fresh Calendula petals and cover completely with oliveoil. Put the lid on and leave it for 3 to 4 weeks in a cool & light space (I prefer not to put it in the sun but some people do). Turn the jar daily upside down. Strain & squeeze the oil out. The cold infused Calendula oil is ready for use.
Calendula is an antiseptic, antifungal and astringent remedy for many skin problems, inflammations and minor injuries.
